So, my bonnet was intermittent but now, does not open when pulling the lever.
This is the kicker - the car will acknowledge the bonnet is open after pulling the lever, (will say BONNET OPEN when locking), and when I push the bonnet down, I hear a click.
What could this be?
When my bonnet release cable broke I was able to release the two latches from the outside. If I get time I’ll try to find my post on how I did it.
The switch is under the RH latch, so if that one is releasing, it will show as open even if the LH latch is still closed and the bonnet won't open. Sounds like your LH latch isn't releasing.

iirc, this is an annoying fix? I drive this car a lot. 4.5k miles in 4 months. My coolant needs topping ever so slightly. How can I open the bonnet?

I had a problem where the cable had slipped so was moving the latch but not quite far enough. I was able to get a length of 5mm steel rod up from underneath onto the cone that was poking through and while someone else heaved on the release, I tapped the rod up with a hammer.
4.5k in 4 months? I'm going to have to keep an eye on my record. I took mine in for MoT at the end of August and noticed I'd only done 22k since the previous test. Previous years had been over 30k......
At times the bonnet opens, which was great as I needed a coolant top up.
I may sell this P38 so I’d like to fix this problem. This is a good video

Could this be as simple as buying two latches? I can't imagine this has anything to do with the bonnet pegs.

If it is only sticking on one side, check to make sure the cable is pulling it open fully. If not, replace the cable, if it is, all it needs is the two bolts holding the latch slackening off and the position adjusting.
Upon further research, I found your recommendation of using pliers to pull the cables from inside. This has worked for all three attempts today. (Extremely ideal as I was able to top up the car with oil) However, I feel that this is not a permanent solution. I sense that one day, I'll pull the cable with such force that it will snap.
When I had the bonnet open, I had my other half pull the handle to inspect the latch's function. They both move as standard. I did want to add WD40 for good measure, but I have lost it lol.
there is a tool for lubing cables, i brought mine from a motor bike shop. i t just clamps around the cable end and you use wd 40 as lube. has a little hole in it to put the small pipe in that comes with the wd 40. they work a treat.
